Ingredients:1 ½ lb chicken breast, diced2 large onions, sliced4 stalks celery, sliced6 oz mushrooms, sliced6 oz water chestnuts, drained and sliced6 oz bamboo shoots, drained and sliced2 Tbsp soy sauce3 cups chicken stock1 tsp white sugar2 Tbsp olive oilInstructions: In large skillet, heat olive oil and place chicken in pan. Cook until no longer pink in center. Add chicken stock, onions, bamboo shoots, and celery. Let cook 8 to 10 minutes. Add soy sauce, water chestnuts, sugar, and mushrooms.
