Ingredients:
1 pound flank steak
1/4 cup cornstarch
1/4 cup canola oil oil
2 teaspoons fresh ginger minced
1 tablespoon garlic minced
1/3 cup lite soy sauce low sodium
1/3 cup water
1/2 cup dark brown sugar
4 stalks scallions green parts only, cut into 2 inch pieces

Instructions:
  • Slice the flank steak against the grain (the grain is the length of the steak) the long way 1/4 inch think pieces and add it to a ziploc bag with the cornstarch.
  • Press the steak around in the bag making sure each piece is fully coated with cornstarch and leave it to sit.

    Ingredients:
    3 pounds top sirloin cubed
    3 tablespoon vegetable oil divided
    1 teaspoon seasoning salt I use Lawry's, divided
    fresh ground black pepper to taste
    2 cups low-sodium beef broth
    1 tablespoon Worcestershire
    1 teaspoon Italian seasoning
    1 teaspoon dry thyme
    1 cup diced onion
    1 tablespoon minced garlic


    Instructions:
  • Heat 2 tablespoons oil in a 12" cast iron or other heavy skillet over MEDIUM-HIGH heat. When nice and hot, add half the beef cubes and season them with 1/2 teaspoon seasoning salt and fresh ground black pepper, to taste. Allow to sit, undisturbed for a couple of minutes then stir and cook just long enough to sear the beef without cooking it through. Use a slotted spoon to transfer beef to the slow cooker. Add remaining oil to pan and repeat with remaining beef cubes, seasoning salt and pepper.
  • Add the beef broth and Worcestershire sauce to the slow cooker and sprinkle the beef with the Italian seasoning and thyme. Sprinkle the diced onions and garlic over the top.Tuck a bay leaf into the mixture.
  • Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, or until beef is fork tender.

    Sour cream, jalapenos, seeded and diced tomato, green onions, or black olives, for serving

  • Roast the poblano pepper: preheat the broiler then place poblano pepper on oven rack about 4" from broiler element. Cook until blackened on top, then, with tongs, flip over. Broil until blackened. Continue rotating and broiling until blackened until all sides are blistered. Alternately, carefully hold the pepper with heat-proof tongs to a gas stove flame (or place on top of stove rack), rotating to blacken all sides. Set aside and let cool slightly.
  • Make the smoky sauce: When poblano pepper is cooled to the touch, peel off blackened skin, remove stem, and seeds. Combine all ingredients in a food processor and blend until very smooth.
  • In a large skillet over medium heat, brown ground beef, breaking up with a spatulate. Add in mushrooms and sauté until softened and liquid is evaporated, just a few minutes. Stir in poblano-salsa sauce and reduce heat to medium-low. Cook a couple minutes until bubbly and a bit thickened. Remove from heat.

    1 1/2 pounds stew meat, beef chuck or sirloin cut into large bite size pieces

    4-6 garlic cloves, minced

    1/2 cup all-purpose flour
    4 cups low sodium beef broth

    Instructions:
  • While meat is still on the cutting board, toss it with 1 teaspoon salt and 1/2 teaspoon pepper. Heat 1 tablespoon olive oil in a large skillet over medium high heat. Add beef (work in 2 batches if needed) to the very hot skillet and let cook undisturbed for approximately 2 minutes, or until nicely seared on one side, then continue to cook while stirring until beef is browned all over but not cooked through. Remove beef to 6-quart (or larger) slow cooker and top with onions and garlic.
  • To the remaining juices left in the skillet, melt 1-4 tablespoons butter. The amount of butter will depend on how much juices/fat are left from searing your meat. You want approximately 1/2 cup between the juices and the butter. Whisk the flour into the butter until dissolved followed by all of the Gravy ingredients. Bring to a boil then reduce to a simmer until thickened to the consistency of thick gravy. Add to slow cooker and stir to combine.
  • Cook on HIGH for 3-4 hours or on LOW for 5-7 hours. Beef is ready when it is melt in your mouth tender. Season with additional salt and pepper to taste. Serve with potatoes, pasta or rice.

Add about a third of the meat and spread it across the pan.
  • Cook for 1 minute and then use a large spatula to flip the pieces over. Cook 1 more minute. Use a spatula to remove the meat to a plate and then repeat with a second batch of meat pieces. Add an additional tablespoon butter to the skillet. The entire cooking process for the meat should only take a few minutes total. When the meat has finished cooking, loosely tent foil over the cooked steak bites on the plate.
  • Add the remaining 2 tablespoons of butter to the hot skillet and toss the mushrooms in the butter. Sprinkle with the remaining salt and let the mushrooms cook without stirring for 2-3 minutes, until browned. Stir and let cook a few more minutes until soft. Add the mushrooms and the buttery pan drippings to the plate with the steak bites. Serve hot. Enjoy!
