1 boneless skinless chicken breast

1/2 Tbsp avocado oil, or olive oil
1/2 tsp dry Italian seasonings

Instructions:
  • Place chicken together with the marinade ingredients in a small Ziploc bag, or glass bowl.
  • Seal bag while pressing the excess air out, or cover glass bowl with lid or plastic wrap. Rub marinade into the chicken then transfer to refrigerator and allow marinate at least 30 minutes and up to 6 hours.
  • Spiralize zucchini using a noodle blade ( cleanfoodcrush.com/spiralizer ) then add to a colander set on top of a large bowl to catch moisture.

    Ingredients:
    1 1/4 pounds skinless, boneless chicken breast halves
    1 tablespoon vegetable oil
    1 can (10 1/2 ounces) Campbell’s® Condensed Cream of Chicken Soup or Campbell's® Condensed 98% Fat Free Cream of Chicken Soup
    1 1/2 cups water
    1/4 teaspoon paprika
    1/4 teaspoon ground black pepper
    2 cups uncooked instant white rice
    2 cups fresh or frozen broccoli florets

    Instructions:
  • Step 1 : Season the chicken as desired. Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until well browned on both sides. Remove the chicken from the skillet.
  • Step 2 : Stir the soup, water, paprika and black pepper in the skillet and heat to a boil. Stir in the rice and broccoli. Reduce the heat to low. Return the chicken to the skillet. Sprinkle the chicken with additional paprika. Cover and cook for 5 minutes or until the chicken is cooked through. Season to taste.

    Ingredients:
    1/3 cup refined coconut oil
    1/2 cup vegan chocolate chips like Enjoy Life
    2 eggs
    1 egg yolk
    1/4 cup coconut sugar
    1/2 tsp vanilla extract
    pinch of salt
    1 tablespoon tapioca starch
    3 tablespoons almond flour
    coconut milk ice cream for serving


    Instructions:
  • Preheat the oven to 450°. Grease two 6-ounce ramekins with coconut oil. Place the ramekins on a baking sheet.
  • Place coconut oil and chocolate chips in a microwave-safe bowl. Microwave 60 seconds then stir well. Continue microwaving in 30-second bursts, stirring very well in between, until chocolate is completely melted and smooth. In a medium bowl, whisk the eggs with the egg yolks, coconut sugar and salt well.
  • Fold the chocolate mixture it into the egg-sugar mixture, then stir in the tapioca starch and almond flour. Spoon the batter evenly into the prepared ramekins and bake for 12 minutes, or until the sides of the paleo molten lava cake are firm but centers are still very soft. Remove form oven and let cakes cool in the ramekins for 1 minute. Run a very thin steak or paring knife around the edge of each cake. Cover each with an upside-down dessert plate then carefully turn each one over. Let stand for 10 seconds then unmold. Serve immediately with plenty of vanilla ice cream.

    1 pound grass fed flank steak, thinly sliced*
